Tomato Orange Soup

  • 1/2 cup butter, unsalted
  • 1/2 cup onion, chopped
  • 2 pounds tomatoes, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon thyme
  • 1 cup orange juice, fresh
  • 1/2 cup heavy cream

Melt butter, saute onion and thyme. Add tomatoes, salt, pepper, and baking soda. Bring to boil, simmer 15 mins. Puree in food processor, strain, and return to pan, add orange juice and cream. Bring to simmer, stirring constantly.
